Albanian Cornbread with Leeks & Feta [Pispili]

Preheat oven to 400 F/204C


In a mixing bowl combine:

1 cup yogurt

1 1/2 cups olive oil

6 eggs

2 cups finely chopped leeks (depending on your size 2-4)

2 cups crumbled feta


In another bowl combine:

3 cups flour

1 cup corn flour

2 teaspoons baking powder


Combine the dry ingredients into the wet ingredients. Mix well. Place in a 13x9 baking pan and spread evenly.


Bake for 30-40 minutes until a toothpick comes out clean.


For a deeper flavor in the leeks, sauté them with olive oil, salt, and pepper before adding them to the mix.
