Ingredients ½ cup red lentils
1 bay leaf
¼ cup quinoa
½ cup water
1 small onion
1 cup breadcrumbs
2 garlic cloves
2 tsps of each: Oregano, Basil, Parsley, Pepper
1 egg (or egg substitute)
4 cups sauce
Box of Pasta
Instructions 1. Cover the lentils with water. Add the bay leaf and bring to a boil. Simmer for 15 minutes and drain, removing the bay leaf.
2. Combine quinoa with ½ cup water Cook until the quinoa has absorbed all the
water (15 minutes).
3. In a small pan, combine a teaspoon of olive oil with the diced onion. Saute for 5-7 minutes until soft.
4. Add lentils and onion to a mixing bowl and coarsely mash with a fork. Mix in cooked quinoa, breadcrumbs, garlic, and spices.
5. Mix in egg.
6. Using a tablespoon measuring spoon, form lentil mixture into balls.
7. Fry in oil on the stovetop or bake at 400 F/204 C for 20 minutes, flipping halfway.
8. Cook pasta and serve with sauce. Place a few meat[less] balls on top.
